Wellness Recipe
Heart-Healthy Veggie Tacos
Ingredients:
2 tomatoes, diced
1 beet, peeled & shredded
1 cup spinach, chopped
2 carrots, shredded
1 bell pepper, sliced
1 cup broccoli, finely chopped
1 tbsp olive oil
1 tsp cumin
½ tsp garlic powder
½ tsp chili powder
½ tsp salt
6 small whole wheat tortillas
½ avocado, mashed (optional)
1 tbsp lime juice
Instructions:
1. Heat olive oil in a pan over medium heat. Add bell peppers, broccoli, and carrots. Cook for 5-7 minutes until slightly tender.
2. Add cumin, garlic powder, chili powder, and salt. Stir well.
3.Warm tortillas, then layer spinach, sautéed veggies, shredded beets, and diced tomatoes.
Add finishing touches
4. Drizzle with lime juice and top with mashed avocado if using.
